Det japanske køkken skiller sig ud fra resten af verden.

Det er der flere årsager til.
Udover sushi, så består det japanske køkken af mange forskellige stilarter. Det findes lige så mange forskellige stilarter som hele det europæiske køkken tilsammen.

De japansk retter er sammensat på en sådan måde, at de enten afgifter kroppen eller tilføre kroppen næring. Næring i form af mange forskellige grøntsager, sojabønne og fisk. Japanerne spiser også kød men slet ikke i de samme mængder som man oplever det i Danmark.

Mælke produkter indgår slet ikke i det japanske køkken, til gengæld spiser japanerne mange sojaproteiner i forskellige afskygninger.
