De japanske munkes indflydelse på det japanske køkken

Soja-ShiitakeIndenfor det japanske køkken findes der et decideret vegetarisk køkken der udspringer af buddhistiske munke.

Ifølge buddhisme er det forbudt at slå ihjel og alt levende som ’løber’ væk, når man forsøger at indsamle råvarer, må ikke bruges i madlavning.
Med det udgangspunkt har munkene udviklet et sundt vegetarisk køkken, hvor korn, sojabønner, og grøntsager er de bærende råvarer. Denne stilart kaldes Shojin Ryori.

Retterne som blev udviklet i klostre i Kyoto området, har påvirket resten af det vegetariske køkken. I Japan findes der restauranter der har specialiseret sig i at lave Shojin Ryori.  Dertil findes mange velsmagende og skønne japanske vegetarretter der er tilgængelig for alle.
