NigiriPå min sushikurser oplever jeg ofte, at nogle af kursisterne har en lidt defus oplevelse, når det kommer til nigiri. De fleste jeg møder synes at nigiri smager ok, men at det ikke er den helt store oplevelse.

Jeg synes, at det er rigtig synd, at gæster forlader en sushirestaurant med den oplevelse. Fisk til nigiri som er skåret ved brug af japanske teknikker kan ikke sammenlignes med noget andet.
Det er silkebløde skiver med masser af smag som smelter på tungen.

En af mine fornemmeste opgaver på Advanced sushikursus er, at sikre at kursisterne får en dybere forståelse af fisk og håndtering af fisk. Dertil har jeg også en forventning om, at de lærer at skære fisk til nigiri af sådan en kvalitet, at de egner sig til at blive brugt til nigri. Sidste men ikke, så skal skiverne helst smelte på tungen.
