At træde ind i en sushirestaurant i Japan er langt mere end blot at sætte sig til bords, det er en indgang til en kulinarisk verden præget af tradition, innovation og en imponerende variation.

Den japanske sushikultur er internationalt anerkendt for sin præcision, æstetik og kærlighed til råvaren. Et hurtigt blik på menukortet vidner om den store mangfoldighed af fisk og skaldyr, der bruges i det japanske sushikøkken.

Men hvor mange forskellige typer fisk kan man egentlig forvente at finde?

I traditionelle sushirestauranter vil man typisk kunne vælge mellem 15 og 20 forskellige fisk og skaldyr. På mere moderne eller eksklusive steder kan udvalget nå op på 30 varianter særligt hvis menuen skifter med sæsonerne.

Det er helt almindeligt at støde på klassikere som tun, laks, rød snapper, rejer, blæksprutter, søpindsvin, yellowtail, makrel, ål og flynder for blot at nævne nogle få.
